Chicken Won Ton Salad
2-3 chicken breasts
1/2 pkg. won tons
2 heads of lettuce
1 bunch of green onions
1/2 cup slivered almonds
sesame seeds and water chestnuts are optional
Cook the chicken breasts any way you'd like to. I fry it up in a pan with salt and pepper or some other seasoning that I feel in the mood for. It doesn't really matter. Then shred/chop up into small pieces. The smaller the bits of chicken, the more it spreads through the salad. Fry the won tons up in a little bit of oil. They don't need to be in the oil long; just till they are golden brown. Wait to add the won tons until right before serving. I put the won tons in a bread bag or large zip lock bag and crunch them up into small pieces about the size of a silver dollar. The size doesn't really matter, but I wouldn't turn it into crumbs.
Chop up the lettuce and green onions. Add nuts and optional ingredients if you'd like. I've never had the optional ingredients in my pantry so I always do without it. Mix everything, but the won tons until you are ready to serve. Then add the dressing and mix it all thoroughly together.
Dressing:
1/2 cup vegetable oil
1/4 cup distilled white vinegar
1/4 cup white sugar
1 teaspoon salt
1 teaspoon pepper
Put the ingredients for the dressing in a sealed container and shake it up. I like to do this at least thirty minutes in advance to let the ingredients mix and dissolve the sugar. Wait till you are ready to serve the salad and shake up well before pouring it onto the salad.

I've been asked about these teardrop acrylic necklaces a lot, especially when they find out I made it. It's sooo easy. I found cheap teardrop beads on Etsy. These came with chain hoops already in them and I connected those hoops to chain I bought from the Hobby Lobby craft store. I made sure the chain's loops were big enough to easily attach the beads. Then I added a clasp to finish it off! Takes like ten minutes. You could add a second layer of beads by connecting more chain that hooks higher up above your last connected bead on either side, but I liked it just like this. I made a bunch of these in a different color for a wedding to tie in all the girls. Would make a great gift too!
